Preparation

Thanks you so much for the opportunity to let us introduce our unique and exclusive product:

"Peruvian Rotisserie Sauce" 100% made in Perú to make the well know Peruvian “Pollo a la Brasa”!.

 

To get the Brown Golden Chicken "Use Only” our exclusive "Rotisserie Sauce" that contains our secret Peruvian ingredients, do not add anything else!. Use 1 oz. per chicken (average 3lbs. to 3 ½ lbs.)

Cut the excess fat and wash with water only. Dry it well. Apply our sauce inside the chest cavity, under and on top of the skin. Marinade over night or minimum 4 hrs. before cooking. You can use more of our rotisserie sauce if you like. Once the container is opened it must remove all air, close well and save in a cool place at a temperature of 50° F isolated from the light. Shelf life is 18 months.

Home:

 

*  For conventional "House" ovens, cook at 450º F for 1 Hr. and 15 Min. Turn the chicken over every 30 min.

 

*  For small "House" rotisserie oven, cook at 500º F for 1 Hr. and 15 Min.

 

*  For Microwave, cook at 520º F. for 1 Hr. Turn the chicken over every 30 min. Use a non-metal rack to let the juice drains down.

For extra brown just add 15 more minutes.

Restaurants, Commercial and OutDoor:

 

*  For restaurant charcoal ovens, cook at 536º F for 50 min. or 1 hr. "Spray" a little water onto the charcoal to get the smoke smell and flavor.

 

 

*  For outdoor grill, cook at 500º F (if your grill reach that temperature) for 1 Hr. and 15 Min. "Spray" a little water onto the charcoal to get the smoke smell and flavor.
